Brownies right! Holiday gifting cannot be complete without some Fudgy Dark Chocolate Brownies!
Two options to gift. A Single Serve Brownie in a jar. Mix, Bake and Serve in the jar. Or a jar that makes 10 pieces that you can share, or not. 🙂 Both use 100% Spelt, Organic fair trade 70% Dark chocolate Theo bar(these bars are amazing), organic unsweetened cocoa powder, chocolate chips/carob chips and bliss.
All Vegan, all awesome! I love the brownies with the 70% Dark bars instead of melting regular chocolate chips. The Dark chocolate had cocoa butter and a hint of vanilla. The Single Serve jars can be easily made gluten-free with gluten-free flours like Oat, nut flours, sorghum, millet or brown rice.
What chocolate goodies are you planning to gift this year.
Eat me! Brownies from Vegan Brownie Mix in a Jar.
The secret to fudgy brownies, under bake them, I cannot stress that enough. They continue to bake once outside too. so let the center be a pudding if you will.
Other chocolate awesomeness…

Zesty No Bake Chocolate bars
Triple Chocolate Salted caramel Brownie
Steps:
Large Brownie Jar:
Make the jar. Layer the spelt, sugar, cocoa powder. Then dark chocolate tabs.
Add chocolate chips, seal and gift.
Take the Dark Chocolate tabs from the jar. Add to warm-hot non dairy milk. I use almond milk or coconut milk most days.
Mix well, add oil, mix. In another bowl, empty the rest of the jar contents. Give them a whisk and add to the melted chocolate oil mixture. Mix to combine.
I prefer to remove the chocolate chips from the jar and add to the batter later. My chocolate chips are mixed in with carob chips in the storage bin.
Drop and even the batter out with a spatula. Thats thick.
Bake in pre-heated 365 degrees F for 31 minutes. Cool completely before slicing. the middle might look liquidy, but it will continue to bake and set as it cools.
Single Serve Brownie Steps:
Melt the dark chocolate tab in 2 tsps almond milk.
Add oil and mix. Whisk the dry ingredients and add to melted chocolate. Bake in pre-heated 365 degrees F for 15+ minutes.
cool for a few minutes before digging in. The pictured jar below has a bit more batter for photographs. The batter will make about ¾ of the jar. Anything more than that make sit difficult to mix up the batter within the jar.
Yum.

Brownie Mix in a Jar
Allergen Information: Free of Dairy, egg, soy, yeast. Can be made nut-free, corn-free. Can be made gluten-free with all purpose gluten-free flour blend. *soy-free if the chocolate chips and bars is free of soy.
Ingredients: 1 16 oz, 2 cup Mason Jar. Makes 8.5 by 4.5 inch bread pan, 1 inch thick. Use any thick pan or stoneware pan or make 2 mini loaves.
Jar:
½ cup + 2 tablespoon Spelt flour (2 tablespoon less than ¾ cup)
¼ teaspoon fine sea salt
Store in an airtight container when cool. For longer shelf life(if the brownies actually last more than 2 days) store in refrigerator. Warm before serving.
Warm them in the microwave or oven to soften, top with your favorite ganache, salted caramel and/or ice cream and serve. Brownies are done when a toothpick inserted 1 inch from the corner comes out almost clean, 2 inches from the corners for a larger pan. The center might look liquidy but it will continue to bake outside for another 5 minutes. Double the ingredients for a 8 by 8 brownie pan. I use a combination of oils, virgin coconut, extra virgin olive oil or vegan butter(Use any 2 of these, ⅛ cup each to make the total ¼ cup oil). The oils, butter melt easily when combined with the warm melted chocolate. If making the brownie from scratch, then add the flaxmeal into the wet ingredients. Mix, let sit for 5 minutes and then add the rest of the whisked dry ingredients.
Single Serve Brownie Mix in a jar. Mix, Bake, Serve in the Jar

Whisk the baking soda, baking powder, salt, flaxmeal into the flour. Layer the flour, sugar, cocoa powder. Top with the Dark chocolate tab, and chocolate chips.
Instructions on the jar:
Remove dark chocolate bar from the jar or half of the chocolate chips. Give the rest of the ingredients in the jar a quick whisk. In a bowl, heat up 2 tsps milk so it is hot, add the removed dark chocolate and mix to melt. Add oil and mix to combine. Add this to the jar and mix to combine. (add a few drops more milk if the mixture is too stiff). Bake jar in pre-heated 365 degrees F for 15-19 minutes or microwave for 35 seconds. Let cool slightly before digging in.
These brownie jars are being shared at Rickis wellness weekend.

How long can these stay in the jar before you have to bake them? PLanning to give this for my kids birthday but might need to deliver it a week ahead of time.
Richa
The mix stays fine for 3-4 months

Can you use oat flour instead of spelt?
Richa
yes
Donna
Hi! I want to make them for a gift but i don’t have flaxseed… do you think chia seeds would work? This recipe seems delicious by the way 🙂 !
Richa
yes chia seeds will work
Holly
Hello! I was wondering, instead of using dark chocolate tabs, I use chocolate chips, would that mean that I add 1/2 a cup of chocolate chips? Also, the recipe mentions that the chocolate tabs should be melted. How does it work in a scenario where I use only chocolate chips? Do I melt half of them? Or should I just leave it and add it later? Thanks so much!
Richa
You can put the chocolate chips that have to be melted in a small pouch inside or outside the jar. That way the chips that are to be melted and the chips that get mixed in the batter will stay separate. You don’t necessarily need to add the chips to mix in the batter, but the part with the chips/tabs are melted into the wet is important to make fudgy brownies.

Hello! I was wondering for spelt flour, should I use White Spelt or Wholemeal Spelt? And would using either one make a difference?
Richa
You can use either.
Kylie
Wondering if hazelnut meal would be a good flour substitute…?
Richa
I don’t think so. It would need a different recipe as the nut meal would need different amount of moisture.
Arathi
Hi! For the single serving it can be baked in the microwave for 35 seconds and then it’s ready to eat? Is that accurate?
Richa
yes that is right. first heat the milk to hot(about 30 seconds in microwave), add the chocolate bar and melt it. add that to the jar and microwave for 35 seconds.

I feel like a crazy person, the 16 oz jars are too small! What am I doing wrong?
Richa
It is a 16 oz , 1 pint regular mason jar in the pictures and it is filled with the exact measurements. it might be slightly tight fit but if you knock the jar a couple of times so the flour settles in well then it should fit in well. the jar fits a bit more than 2 cups dry ingredients , the flour is 3/4 cup, sugar 3/4 cup, 1/4 cup cocoa, and 1/4 cup + 1/4 cup chocolate chips is abt 2 1/4 cup.
Richa
you can use a larger jar or reduce a bit of the spelt flour.
Richa
Hi Cherl. I made the jar again and you are right it barely fits. Ithink i used 1/2 cup sugar when i made the jars hence it fit. I am sorry about that. You can use the same measurements and pack the dark chocolate in a bag outside. or reduce both the sugar and flour by 2 Tablespoons.
Richa
updated the recipe measurements.

Richa….is the flaxseed meal mixed in with the flour or layered on top of the cocoa?
Richa
you can do it either way. the contents get whisked before making the brownie. i usually add it to the flour.

It looks great! Is it possible to use whole wheat or all-purpose flour instead of spelt? Thank you!
Richa
Yes you can use Whole wheat flour or all purpose flour.
Gabby @ the veggie nook
OK I LOVE you for the single serving in a jar- that is just the best Christmas idea ever 🙂

Oh yum! I am sooo loving these jar recipes!! I am positive that I would probably blow through several of the jars all by myself easily as they look so delicious 🙂
Caroline
My son and I just made a batch using AP flour. We had to add another 1/4 cup milk to get a decent batter and it was overbaked after 15 minutes in our 9″x4″ pan. I’m keen for a vegan jar mix so will try again, probably with more salt next time and a 10 minute bake!
Thanks for the idea. x
Richa
That’s odd. What temp was the oven at?
Annie
An absolute classic, girl!

Great thinking! I’ve seen plenty of cookie and brownie mix gifts, but never one packaged packed in the very jar it can be baked in. So smart, and so much fun. 🙂
