After looking through your new cookbook, I had a question about soy curls. I see you have a number of recipes that call for this and I’m unfamiliar with them and can’t find them at any of my local grocery stores (I’m in Canada). As I continue to hunt for these, I was wondering if tofu or tempeh could be used in place of these in most recipes?

I don’t think butler soy curls are available in Canada. But you can find similar dried soy things in Asian and Indian stores. Indian stores usually carry soy chunks that are chewier. Asian stores have similar chicken like versions , names will vary. You can also use seitan or other subs as mentioned in notes for most recipes in the book

I just received my preordered copy yesterday and have looked through all the recipes. They look amazing and I’m so excited to try them. It’s hard to choose what to make first!
I have been cooking with my IP for years but I have never tried doing the layers of pots like you have in some of the recipes. I checked your “tools and accessories” section and looked at Amazon but it was hard for me to figure out what to get. Have you ever shared which specific products you use for things like a tall rack to elevate a pot above the main dish in the inner pot, or double stacked pot in pot? Thanks!
