]]>These are super refreshing scones that come together in just one bowl. We use some chilled coconut cream to add the flaky texture. They are perfectly flaky without using any butter or oil, but if you want to add some, you can go ahead and add some to the dough, for extra buttery, extra flaky scones.
To make these lower fat, see my low-fat apple cinnamon scones, which are also oil-free. Follow the process for the wet ingredients from there.
Change up the berries to use seasonal berries of choice. Make orange cranberry or other combination scone. Add in some poppyseeds for lemon poppyseed scones!
No matter what variation you choose, lemon blueberry scones are going to be a new favorite breakfast, brunch, or snack. They are so easy to make, perfect for spring or any season, and vibrant and delicious! Drizzle with your favorite icing!

]]>These vegan savory scones with spinach and cheese are full of flavor from fresh herbs, sun-dried tomato, and green onion. They are absolutely delicious and perfect with gravy or spread with vegan butter. You can also make these a side with soups, bean stews, tofu scramble or really anything else you want to serve with it.
They are crisp on the outside and buttery on the inside, even though there isn’t any added butter in this recipe. Instead, they get this amazing texture from a little bit of almond flour, vegan cream cheese, and non-dairy “buttermilk” made from mixing vegan milk with a little bit of vinegar.
These scones / biscuits are based on my other oil-free scones, like my churro scones, banana scones, and apple cinnamon scones. For these savory version, I add herbs, spinach, and vegan cream cheese.

]]>I love pancakes when they are hearty and not just carriers of maple syrup 🙂 These gluten-free lemon blueberry pancakes are my latest pancake-making adventure and use almond flour that make them a satisfying breakfast. They’re packed with sweet blueberries and have a great, tangy flavor from lemon juice and zest. They have a perfect texture and flavor — no one will guess that they are both gluten-free and grain-free!
You can make them even more fluffy by adding a little bit of club soda to the batter instead of the non-dairy milk. I use non-dairy milk for this recipe, but as you have seen in my other gluten-free recipes, like my gluten-free cakes, I usually add club soda as one of the rising agents. Adding some air to gluten-free batter before cooking or baking it helps it rise and get fluffy, and reduces the chances of gummy result.

]]>Rava idli is a steamed idli cake made with semolina. You just mix the batter, steam it after 10-15 minutes, and serve it with other Indian dishes. I used a similar batter and made it into waffles or pancakes.
What I love about this recipe is that it’s so flexible! You can swap spices in and out to change out the flavor and you can add veggies of your choice, too. You can use the batter to make pancakes too. You can see them served with the kerala white bean stew here
Enjoy these savory, Indian waffles with your favorite chutney and some Indian pickles or sambar. It is delicious with coconut chutney, tomato chutney, or mint chutney!

]]>There are so many different baked oats options on the blog. I have sweet options like Snickers baked oatmeal, banana bread baked oatmeal, pumpkin baked oatmeal, and apple pie baked oatmeal. There are also savory baked oatmeal recipes, like the pizza oatmeal bake and veggie baked oats.
This baked oatmeal mix in a jar contains all of the dry ingredients you’ll need to make all kinds of amazing baked oats recipes!
For most of my baked oats recipes, I use basically the same amount of oats and other ingredients, so I decided to make a mix that you can use really quickly for whichever kind of baked oats you want to make. You can use my mix as written to make PBJ baked oatmeal or Tex-Mex baked oats, use my other recipes for inspiration or vary up the mix-ins and/or spices to build your own creations! See some options in recipe notes.
If you are planning to use the the oats for just sweet options, add in some vanilla powder into the mix as well!

]]>I know, savory granola bars ? Like what! And Doritos Nachos spice! But believe me, they are deeelicious! Bet you never thought your fave savory snack could be a hearty Granola bar!
They’re almost like a cracker, but they’re thick and have a lot of nuts and seeds and good stuff. They’re softer than just a nut and seed cracker which is usually crunchy. These are kind of like shortbread cookies, and a non-sticky, savory granola bar.
My niece just got her braces and she loves to eat granola bars, but she’s not allowed to eat them, because they’re all sticky. So I made her these granola bars: a sweet version and this savory version. And since she loves spice, these are somewhat spicy.
You can adjust the flavor to preference. The flavor of these should remind you of a bit of Doritos chips with all of that nutritional yeast and paprika.
You can change up the spices to make a different savory flavor profile to preference. You can add just some chili powder blend or add some garam masala, or berbere, or Cajun spice to these.

]]>Stop the presses and make these Cannoli overnight oats! I love cannolis when I visit visit Italian restaurants. The creamy filling dotted with chocolate chips or candied orange peel in a crisp shell…what’s not to like? I use the same concept to add those flavors and textures to these cannoli overnight oats.
We have a base of the creamy oat filling with a little bit of vanilla and orange zest. We add chocolate chips to the mixture and then top this with fresh oranges. You can also add candied orange peel as a topping along with pistachios.
But the show stopping piece of these cannoli overnight oats is the crisp, cinnamon sugar tortilla on a skillet. It acts as the cannoli shell to make it super crispy. Crumble that on top and serve it. Or you can serve the tortillas on the side.
For the cream, which has a cheesy flavor profile, we use some nondairy yogurt. You can also add in vegan cream cheese instead.

]]>My niece just got her braces and expanders, and she cannot eat sticky granola bars. So she she’s been asking me to make some non-sticky versions that she can easily eat. So I made her two versions: a sweet one and a savory granola bar(think Doritos snack bars! Coming soon)
I use almond flour as the base of the granola bars and some maple syrup. The almond flour keeps the granola bars non sticky and somewhat like crisp shortbread. It also makes them a very filling granola bar that’s perfect for breakfast.
There are the usual ingredients, like oats, nuts and seeds, and some chocolate chips, because you just need chocolate chips in a sweet granola bar!
You can change up the nuts and seeds and add some dried cranberries instead of the chocolate chips, if you like. Just be mindful that the dried fruit can get a bit sticky.

]]>Meet Moong Cheela(chilla) – your new favorite savory pancake! Usually moong dal chilla are made by soaking the moong dal(petite yellow lentils/skinned green mung beans), then blending with water to make a batter. But you can also use moong flour to make them!
These Indian spiced pancake flatbreads are made with lentil flour and are simply great to serve as a side with Indian food or as is, loaded with other toppings.
You can serve these with curries, like this chickpea curry, and some dal. Or serve them with some salsa or dips of choice or you can make them into smaller flatbreads and use them as tacos.
You can also turn them into larger flatbreads, to make vegan quesadillas.
I use moong dal flour in this recipe, which means you don’t have to soak the dal and blend it, there is no blending or processing needed, it’s a 1 bowl pancake recipe.
Moong bean or moong dal flour is available in Indian stores. If you can’t find moong dal flour you can use soaked green moong beans or soaked yellow moong dal(skinned green mung bean)
Soak them for at least 6 hours or overnight and then blend them with either the rice flour or soaked rice until you get a batter then add in the rest of the ingredients and use.
You can use the lentil pancakes batter to make savory moong bean waffles!. Keep the batter slightly thick when adding water. Add ⅛ teaspoon more baking soda (total ¼ teaspoon). Grease the waffle iron and make waffles
