These amazing, fudgy vegan almond butter blondies only take 15 minutes to whip up in one bowl. After mixing, you just pour them into a baking pan and bake to perfection.

This blondies recipe is lightly sweetened, fudgy, and buttery, with flavors of vanilla and cinnamon. Use other flours or gluten-free flour blend of choice. If you are using a whole grain flour to replace the white flour in this recipe, add 1 to 2 tablespoons less than the mentioned quantity, and add more only if the mixture is too wet.

Not only are almond butter blondies delicious and easy to make, the batter is free from added refined oil! If you want to make them completely oil-free, use cacao nibs in place of the chocolate chips.

It’s a wrap – the best recipes of 2022 are in. This year I put out 130 new recipes! I also put out a new cookbook! My instant pot cookbook has 150 recipes, several with variations that means more than 150 meals!, it’s 400 pages, thick 2.5 lb heavy, lots of photos and great print! A few popular recipes from the book include mushroom stroganoff, masoor dal, red beans, mason jar pancakes!, Mac and cheese, Alfredo fettucine, Palak tofu, dum aloo(potatoes in curries sauce), baingan bharta(Indian spiced eggplant) and strawberry cheesecake!

Stop what you’re doing and go marinate some tofu NOW because you don’t want to miss out on these Crispy Baked Vegan Tofu Nuggets! They are my new favorite vegan party snack – well, along with my Baked General Tso Cauliflower!

I use the spices used for southern fried chicken and add them to the coating and the marinade. Together they add so much amazing flavor. These are perfectly crispy on the outside and wonderfully meaty on the inside – seriously the best texture and flavor thanks to some key tips and a delicious tofu marinade. Seriously, if you know someone who dislikes tofu, give them these Tofu Nuggets and their minds will be changed forever.

Now there are two things that are super important for making the perfect Tofu Nuggets.

Number one: you need to press your tofu! For most of my tofu recipes, I recommend pressing your tofu, and this is no exception. Squeeze all that excess water out of your tofu. This will give you much better tofu and will prepare it for my tofu nuggets. Use extra firm tofu so that you don’t end up with squishy bites.

tip #2 Marinate your tofu.  Let the pressed tofu sit in the marinade a minimum of 5 minutes. We really want the marinade to soak up into the insides of the tofu, making the texture even better. You can marinate your tofu for 30 minutes, or even overnight.

Aloo Gobi – Spiced Potatoes with Cauliflower. is one of the most ordered Indian dishes for a reason. This Vegan Aloo Gobi is just like the one you get at the restaurant (if you’re lucky ). Packed with flavor, super comforting on a cold day, 100 % plant-based, wholesome and the best!

Aloo gobi has many variations. The home style version is usually a dry side like this. Restaurants usually add the sauce to the dish so that you can order it as a main.You all have been asking me for an Indian restaurant version and this is your basic restaurant style Aloo Gobi with a bit of sauce. You can double up the sauce for saucier and add some cashew cream in the end for creamier if you wish.

What is Aloo Gobi?

Aloo gobi (potatoes & cauliflower) is a popular North Indian veggie dish. It’s basically potatoes and cauliflower cooked with onions, tomatoes and a blend of spices. It can be made in several ways. Dry or with sauce/gravy.  You can make it with only onions or only tomatoes or use no onion or tomato at all, depending on what ingredients you have on hand.

This aloo gobi recipe I am sharing today is one of my favorite versions. It has onions, tomatoes, ginger, garlic, and all the spices and tastes just like what you get in an Indian restaurant. While restaurants typically fry the veggies and then toss them in gravy,  this version is quite a bit healthier as we bake the veggies instead.

If you like broccoli, you will LOVE this simple 6 ingredient garlicky broccoli. Broccoli is blanched then mixed with slowly roasted garlic + sesame oil dressing. The key to amazing flavor is just the right golden brown garlic. Cook it over low heat so it doesn’t burn. Add some crisped tofu and more soy sauce to make a meal!

Broccoli is one of those vegetables that divides the house. There are some that absolutely adore it in any shape and form, and some (read me) that need it generally chopped up in some format with loads of flavor. I used to not like broccoli, then I made dishes like broccoli fritters and broccoli veggie balls and slowly appreciated the vegetable. 🙂 Chop the broccoli smaller or larger for this recipe. The Garlic sesame flavor works amazingly well here.

You know when you need some mac and cheese fix super quickly and without having to think much about what to add when and how much! Or a Creamy Cheese Sauce to dip some veggies, This mix comes in handy!

Just mix or blend with non dairy milk, simmer and done. Add cooked pasta, sauteed veggies or salsa for a dip!

Saute some onion, garlic and veggies such as mushrooms to  the cheese sauce for variation. Add some flavors such as chipotle pepper or cajun or garam masala. Play away!

You can use the mix to make a fabulous cheese sauce to dress roasted veggies or bowls or use as a dip! You can also make a casserole with it. Add more herbs of choice. Lots of options!

Creamy Sun dried Tomato Pasta in a white skillet

This Luscious 30 Minute pasta is a vegan version of a dish I used to get in some restaurant more than a decade ago. Wow that was specific 😉 Anywho, the Creamy garlicky sauce with sun dried tomato some grilled chickin gets a vegan makeover! The Soy curls and soaked in garlic veggie broth, then toasted with more garlic and freshly ground black pepper. Then added to the cream base. Sun dried tomato, herbs, fresh thyme, pasta such as farfalle or fettuccine. Bliss. 

This sauce and pasta are flexible to taste and ingredients. Use gluten-free pasta if needed, some nutfree non dairy cream for no nuts and use seitan, tofu or mushrooms to sub soy curls. 

Easy, Quick and Delicious! Lets make this Luscious Meal.

These Super Soft dinner rolls are what fresh bread dreams are made of. There is a triple moisture action going on here. Yeast rising slowly with just a bit of flour, the sweet potato, and then another rise. All of these together allow for amazing moisture retention in the bread. And to top it all, you don’t even need to knead it much! Just mix to bring everything together into a somewhat dough and everything will work out!

You can use pumpkin puree, butternut puree or mashed potatoes(thin them slightly with non dairy milk to a pumpkin puree consistency), in these rolls. Super versatile and delicious as is. For sweeter rolls, omit the herbs and add some sugar/sweetener. These are lightly herbed and lightly savory just like regular dinner rolls. 

These rolls need just 7 Ingredients, 1 Bowl, are almost no knead, have No Added Sugar, and can be made without Oil!
